Coleslaw:
2 medium carrots, shredded
1/2 a purple cabbage, shredded
1 medium green cabbage, shredded
Dressing:
1 + 1/4 cups mayo (homemade if you’re fancy)
1/2 cup coconut sugar
1/2 cup apple cider vinegar
1/4 tsp celery seed
~ 1/2 tsp salt (salt to taste)
Whisk up your dressing. Taste to see if you want to adjust the seasonings at all.
Add in your shredded veggies.
Mix to combine.
Taste and adjust if needed.
Store in the fridge. Can make this a day in advance if needed. Keeps for several days or so in the fridge.
Serve as a side, on top of sandwiches, on chips, in homemade egg rolls, on tacos, on a pulled pork bowl, on a burrito bowl, on burgers, on a burger bowl … the possibilities are aplenty.
