This is a modified version of a couple carrot cake recipes I liked combined. More closely resembles the recipe by @theviewfromgreatisland It’s grain free and refined sugar free and it’s 100% delicious. All the carrot cake lovers and those who thought they didn’t like carrot cake (🙋🏼♀️) rejoiced. Here’s what I used:
The Cream Cheese Frosting:
12 oz room temp @organicvalley cream cheese
1 stick room temp @raw_farm_by_op lightly salted butter
1 tsp vanilla
1/4+ cup maple syrup (to your desired sweetness)
Pinch of @redmondrealsalt fine salt
*you can use 1/4 or up to a cup of tapioca flour to thicken if you prefer a more firm frosting. I left it out this time.
Beat until well mixed and smooth. You can refrigerate for up to a week or so. Let come to room temp before frosting your cake. I like to make a double layer carrot cake and frosting between the layers and then the top. The raw edge was fun this time.
The Cake:
7 pastured eggs
1 3/4 cup coconut sugar
1.5 tsp vanilla
4.5 cups almond flour
2 tsp salt
1.5 tsp baking powder
3/4 tsp baking soda
1.5 tsp ground cardamom
1.5 tsp ceylon cinnamon
1.5 tsp ground ginger
5ish medium-large carrots, finely shredded
1 cup shredded coconut (optional)
1+ cup chopped pecans
3/4 cup avocado or coconut oil
•Beat the eggs and coconut sugar with a mixer until it’s very creamy, smooth, and light. About 5 min. Then incorporate the vanilla.
•In a separate bowl combine almond flour, salt, baking powder, baking soda, and spices.
•In a third bowl, combine the carrot, coconut, pecans, and oil.
•Into the egg mix, add some dry mix, then some carrot mix, then some more dry mix, and so on until it’s all well combined.
•Pour this batter into two 9” cake pans that have been greased and have a circle of unbleached parchment at the bottom.
•Bake at 350° for 35-45 minutes.
•Toothpick that biz to check for doneness
•Let cool for 10+ before removing from the pans. Let them cool completely before frosting, lest you end up with a pool of glaze instead.
