🍋  Crispy Lemon Pepper Chickpeas

I made a big batch of soaked organic garbanzo beans and used half the batch to make some crispy to switch it up.

It’s super easy. One way to do it is in the oven.

  1. Toss about 2 cups of mostly dry cooked garbanzo beans in 2 Tbsp EVOO
  2. Add about 1/2 tsp of lemon pepper
  3. A good sprinkling of pink Himalayan salt.
  4. Spread them out on a parchment lined baking sheet

Roast at 400• for about 20ish minutes. Give the pan a shimmy shake halfway through. The kids and I love them. 😋
