Herbed (and greened) Rice

Ingredients:
Ground meat (optional) • this time I used pastured organic ground beef
A medium onion or large shallot
3-27 cloves of garlic
1-3 cups spinach
Handful of cilantro
Handful of parsley
1 cup water
1 1/4 cups white rice • soak overnight and rinse well to reduce arsenic
1-2 cups cauliflower rice
1/4-1+ teaspoons ground turmeric
2 cups bone broth
Salt and Pepper
Any other seasonings you fancy • I went with @redmondrealsalt garlic salt, pepper, coriander, and ground mustard seed

Brown your meat if using
While that’s goin’ add your herbs, spinach, water, garlic, and shallot to a blender or food processor and let it go until nice and smooth
Make a well and add more fat if needed and toast that turmeric for a minute or two
Add the rice and toast it a couple minutes, stirring regularly
Add in the cauli rice * btw, you can absolutely make this grain free and use only cauli rice and that’s delish too
Add in the green goodness
Cover with bone broth
Bring to a boil
Lower to simmer
Cover and cook until liquid is absorbed, about 12 minutes.

Serve! We topped ours with tomatoes and @bubbiespickles raw sauerkraut for the abundant probiotics, fiber, minerals, and vitamins 💪🏼

Add whatever you want. Switch it up. The main idea here is we’re getting a ton of herbs and greens into one pan with whatever other ricey goodness we want for a one pan dish and bowl of comfort that nourishes the bod. Season well. Taste and adjust. Have FUN!
